Small secrets for the most delicious mulled wine

1. The best red wine for mulled wine is Merlot, Bordeaux, Port. These wines are dark, fruity and full-bodied, which means they can support all the flavors we're going to add. Look for labels that describe the wine as "sweet" or with "hints of vanilla."
Avoid red wines with high tannins or super oaky flavors like Cabernet Sauvignon (I say this as someone who normally enjoys Cabernet Sauvignon). Also avoid very light red wines, such as Pinot Noir, because they don't offer enough body to support the spices.
2. When warming mulled wine, stir frequently and be careful not to boil. If this happens, the delicate fruit aromas will be lost, the alcohol will evaporate and the drink will become bitter.
3. Mulled wine can be made up to 3 days in advance. Allow it to cool to room temperature before storing in the refrigerator.
If you used fruit for the mulled wine, then its shelf life is 24 hours, since after that the fruit starts to ferment.

4. To reheat: gently warm in a large saucepan on the stove over low heat.

How to use Christmas tea for mulled wine

To make 2 cups:

2 teaspoons of the mixture are added to 500 ml of red wine. It is heated on a low heat, stirring constantly, being careful not to boil. Remove from heat and leave covered for 10 minutes to allow the drink to absorb the aroma of the spices. Strain, pour into fireproof glasses and drink hot.
If desired, you can sweeten with sugar or honey.
Add a pinch of black pepper for an even more warming sensation.
For extra flavor and aroma, you can peel and slice an apple or pear. Divide into suitable fireproof glasses and pour in the hot mulled wine.
*This tea allows for a second infusion within a few hours of the first.
