Types of quinoa

Quinoa is an ancient grain native to South America. Historical evidence indicates that it began to be consumed by people in Bolivia and Peru between 3000 and 5000 BC. Quinoa grows in tall, fluffy, cloud-like clusters resembling candy and thrives in environments where temperatures do not exceed 32°C.

The main types of quinoa you'll see on the market today are white, red, and black varieties, which can be combined to create tricolor or rainbow quinoa blends. While each of these types of quinoa will have slightly different flavor notes, you can generally expect quinoa to bring a mild, slightly nutty flavor to your recipes.

White Quinoa – White quinoa has a fluffy texture after cooking and is closer in texture to rice.
Red quinoa - retains more of its shape and color after cooking. Red quinoa also has a more intense flavor and fresher texture than white quinoa.
Black Quinoa – With a crunchier and sweeter taste than the previous two options, black quinoa is more of an acquired taste.

Quinoa recipes and cooking

Rinse well. Boil for about 20 minutes, on low heat, in a ratio of 1 part quinoa : 2 parts water.
If soaked for a few hours in water, quinoa can be eaten raw.
Use for salads, soups, entrees, desserts, side dishes, and more.
