Zea mays subsp.
Maize starch is used as a thickener in liquid-based foods (e.g., soup, sauces, egg cream), typically by mixing at a lower temperature to form a liquid, paste or suspension. Sometimes it is preferable to the flour because it forms a transparent mixture. It also does not contain gluten, making it suitable in gluten-free diets.
Directions for use: 1 tablespoon of starch mixed with 1 tbsp. cold water and flushes to a coat. It is added to the cold sub-product and bubbles with continuous stirring.
