Sumac is a kind of spice of small purple-reddish fruits with a sour taste. Because of the sour taste of the fruit and leaves, sumac is often called "Acetic tree".
Sumac is used in Turkish cuisine to salads, in Caucasus cuisine for marinating grilled kebab.
Sumac gives the dish a slightly sour taste and is often used instead of lemon. It is widely used in Asian cuisine and actually can replace the lemon, and besides gives the dishes pink, in larger quantities cherry color.
Sumac is very suitable spice for fish and poultry, marinades, salads, kebabs, dishes of beans.
In Turkey and Iran abundantly sprinkle rice with it.
In Lebanon, Syria and Egypt spice meat and vegetable dishes with it.
The sauce of sumac is ideal for serving skewers. Unique for salads and gourmet desserts.
